Application of Food-grade Organic Acid Salt for Baking Food Preservation
Products such as soft European bread, cream cakes, Chinese pastries, and mooncakes manufactured by bakery and pastry processing plants commonly face core challenges including high moisture activity, susceptibility to mold and yeast growth, short shelf life, rapid degradation of preservatives after high-temperature baking, and flavor susceptibility to additives. These products must comply with global food safety standards including China's GB 2760, the EU EFSA, and the US FDA. Among the four mainstream products in the baking preservation sector, the following two core products are compatible with all categories of baking production, demonstrating stable performance and strong regulatory compliance. Details are as follows:
1. Food-grade sodium diacetate (main content ≥99%, compliant with GB 2760, FDA, and EU EFSA standards)
Core Function: Rhizopus, Mucor, Penicillium, yeast, and other major spoilage-causing bacteria that cause mold growth in bread and rancidity in pastries are all successfully inhibited by this broad-spectrum preservative and freshness-preserving core component for baked goods. It works wonders against the most prevalent mold problems in baked goods and is appropriate for all product categories, such as mooncakes, cream cakes, soft bread, and hand-torn bread. It also improves product softness, prevents starch retrogradation, and buffers pH without sacrificing the natural flavor of baked goods.
Advantages of the product include: excellent heat resistance, maintaining over 90% preservative activity after baking at 180–220°C without thermal degradation; broad-spectrum antibacterial activity, maintaining stable efficacy in weakly acidic to neutral systems with superior performance compared to traditional sodium benzoate; compliance with international food safety standards; non-toxic, residue-free, odorless, and preserving the natural aroma of wheat and milk; Delays starch retrogradation, prolongs softness and freshness, and minimizes product shrinkage and residue; outstanding cost-performance ratio, appropriate for large-scale industrial manufacturing.
Use instructions: Before combining, add 0.1%–0.3% of the total flour mass as a premix with dry ingredients for bread dough. Knead in 0.15% to 0.25% of the entire flour amount for pastry wrappers. Add 0.2%–0.4% of the total mass to fillings that have cooled below 60°C. Use 0.05% to 0.15% of the entire batter mass for cream cakes, whisk at a low temperature before using, and premix with powdered sugar.
Common problems include: excessive addition may cause low-sugar products to taste slightly acidic, requiring strict dosage control; mixing with excessive strong alkaline additives may reduce antibacterial efficacy, requiring system pH adjustment to the ideal range of 5.0-6.5; and high hygroscopicity, requiring sealed and dry storage to prevent moisture absorption and clumping.
2. Food-grade anhydrous sodium acetate (main content ≥99%, compliant with GB 2760 and Codex Alimentarius CAC standards)
Core Function: Fermented bread, low-sugar and low-fat pastries, and mooncake fillings can all be preserved with this specific preservative and buffering addition for baked goods. It improves water retention and crumbiness, helps prevent the growth of mold and yeast, and strengthens antibacterial activities by balancing the pH of the system. It also postpones the hardness and retrogradation of starch. It greatly lowers the dosage of individual additives while improving preservative activity when combined with sodium diacetate.
Benefits of the Product: The system's acidity and alkalinity are stabilized by the product's excellent pH buffering capability, which creates ideal conditions for preservative efficiency without being impacted by pH swings during fermentation. It is compatible with the full fermentation-baking process and is resistant to fermentation and high temperatures, as well as yeast breakdown. It maintains product flavor and improves palatability in low-sugar products because it is free of bitterness and bad flavors. It is non-toxic, residue-free, and compliant with international food safety regulations. Its fluffy and water-retaining qualities further increase product yield.
Use: Before making dough, fermented bread should be combined with dry materials at a ratio of 0.05% to 0.2% of the total amount of flour. When the temperature drops below 70°C, the filling and pastry sauce should be added at a rate of 0.1% to 0.3% of the overall mass. It can be used in a 1:2 ratio with sodium diacetate to improve preservation properties in a synergistic way.
Common problems include: excessive addition may produce in a slightly alkaline flavor, requiring exact dosage management; highly hygroscopic, requiring strict sealed and dry storage to prevent caking; and inappropriate for strongly acidic formulation systems as it may lose buffering power.
3.Industry Use Cases
A major chain bakery specializing in soft bread, cream cakes, and Chinese pastries previously faced challenges with product shelf life: 3-7 days at room temperature and merely 15 days under cold chain storage, resulting in a 6%+ return rate. By implementing a preservative solution combining sodium diacetate and anhydrous sodium acetate, the company optimized the formulation process. This breakthrough extended the product's sealed shelf life to 45 days at room temperature and 90 days under cold chain storage, achieving zero detection of harmful microorganisms. The softness retention period for bread tripled, reducing the return rate to 0.8%. With significantly expanded distribution reach and successful export compliance with local food safety standards, the bakery saw its annual sales surge by 32%.
